  1. Preheat your oven to 375°F (190°C).
  2. In a medium saucepan, bring the vegetable broth to a boil. Add the quinoa, reduce heat to low, cover, and simmer for about 15 minutes or until the quinoa is fluffy and the liquid is absorbed. Remove from heat.
  3. While the quinoa is cooking, prepare the bell peppers. Place the halved orange bell peppers cut-side up in a baking dish. Drizzle with olive oil and season with salt and pepper.
